
Creamy Mushroom Penne
Penne in a garlicky mushroom cream sauce with parmesan and black pepper. On the table in half an hour.
Ingredients
Equipment: Large pot, wide frying pan
Method
Boil the penne until al dente; save ½ cup of the water.
Brown the mushrooms in butter over high heat without stirring too often.
Add garlic and thyme for 1 minute, then the cream; simmer.
Toss in the pasta, parmesan and pasta water until creamy. Season and serve.
Cooking tips
- Don’t crowd the mushrooms, so they brown instead of steaming.
Substitutions
- Cream → evaporated milk for a lighter sauce
- Parmesan → any hard cheese
Serve with
Garlic bread and a tomato salad.
Storage
Fridge up to 3 days.
Reheating
Add a splash of milk and warm gently.
