Silky Hummus
Very smooth hummus from canned chickpeas, blended with tahini, lemon and ice water.
Ingredients
Equipment: Heavy-based pan
Method
Blend tahini, lemon, garlic and salt until pale and thick.
Add chickpeas and cumin; blend, adding ice water a spoon at a time until very smooth.
Spread in a bowl, swirl, and finish with olive oil and paprika.
Cooking tips
- For the smoothest texture, pinch the skins off the chickpeas first.
Substitutions
- Tahini → smooth peanut butter (different flavour, still good)
Serve with
Pita, cucumber sticks, or alongside shawarma.
Storage
Fridge up to 5 days.
Reheating
Serve cold or at room temperature.
