Shakshuka
Eggs poached in a peppery tomato sauce with cumin and paprika, served straight from the pan with warm bread.
Ingredients
- 2 tbsp olive oil
- 1 medium onion, sliced
- 1 red bell pepper, sliced
- 3 garlic cloves, sliced
- 1 tsp ground cumin
- 1 tsp sweet paprika
- ½ tsp chili flakes
- 1 × 400 g can chopped tomatoes
- ¾ tsp salt
- 6 eggs
- 2 tbsp parsley or coriander, chopped
- 50 g feta, crumbled (optional)
Instructions
- Soften the onion and pepper in olive oil over medium heat.
- Add garlic and spices; cook 1 minute.
- Add tomatoes and salt; simmer until thickened.
- Make 6 wells, crack in the eggs, cover and cook until the whites set but the yolks stay runny.
- Scatter herbs and feta. Serve from the pan.
Tips
- Take it off the heat when the whites are just set; the hot pan keeps cooking the yolks.
